We have a very long, cool growing season with average daily temperatures reaching 32-35C in July and August, but with lows of 15-20C at night. This immense difference in temperature gives both tremendous ripe fruit and awesome acidity- the 2 key ingredients required to make great white wines. The vineyards are gently rolling and all around the house and never more than 5 minutes from the press/winery, thus ensuring no oxidation of grapes at harvest time and maintaining great freshness of fruit. Vines have been thriving on the property since the 16th century and with our organic approach to farming they will continue to be seen on the property for many centuries to come. Soil type: predominantly limestone-clay. Varietals planted: Chardonnay 65%, Pinot Noir 15%, Sauvignon Blanc 15%, Chenin Blanc 5%.
